Curry Fix

Last Friday Mariel & I cooked something we were both craving that day… CURRY! Mariel recently had the curry noodles at Surgarbowl & got inspired to make her own version that was absolutely amazing. It was green curry, white fish, bean sprouts, cilantro, coconut milk, & rice noodles. First and for most we boiled water to soak the noodles in. Then we added some vegetable oil with the green curry paste to create our base sauce alongside with coconut milk. With the base all married together, it was time to add the fish, bean sprouts, & cilantro which cooked very fast with the lid on. Roughly around 5-10 minutes of cooking and it was ready to combine the noodles & the sauce/fish together in a bowl to consume. Scallops Without The Bacon

Saturday nights are becoming a ritual for Mariel & myself to cook dinner right after I’m done work. This past Saturday night we were really craving some scallops in a simple way without wrapping bacon around it like everyone else does and we decided to sauté them in brown butter/olive oil with salt & paper seasoning. 30 secs on each side to get enough browning without over cooking it… that is a no no!



Now its on to the sides which were pretty easy as well for the prep and cook time. We wanted some greens and startch soo we got some zucchini and potatoes that were seasoned in olive oil and salt & pepper and thrown in the oven to roast. We put the potatoes in 10mins before actually putting in the zucchini to make sure we didn’t over cook them…





We were both really pleased how this meal came out for the simplicity & minimal seasoning that each ingredient stood out on its own without getting masked by over seasoning. Keep it simple!

BBQ Season

Last night me and the miss did our ritual saturday night cooking. Since it was super nice out, we decided to kick off spring time BBQ with burgers & fries! For the burgers I made it with normal ground beef & lean ground beef to balance out the fat content. I added several spices from The Keg steak spice, dry thyme, garlic powder, salt & peper, and oatmeal. Then I added onions, two eggs, olive oil, and worchester sauce. Mix throughly to get all the indigents together…of course use your HANDS to get the full experience of making your own burgers!



Mariel wanted to do some yam fries sweet potato fries that were simple and simple to do. All she did was peel/cut them into wedges and then spread them on a pan sheet. Before baking, she added olive oil and side with salt & peper. She cooked these in the oven for 45mins roughly at 375 degrees.



I made the burgers roughly around 8oz… they were big fatty burgers which I LOVE! I BBQ’d them on mid-high heat for roughly around 5mins on each side with the lid down to cook it throughly. At the last minute I put cheese on some of the burgers and toasted our kaiser buns which was an excellent choice by the miss. This was defiantly a great start to the BBQ season…

Inspiration Cooking



This past Saturday, me & the miss cooked a delicious dinner that got inspired while we were walking the isles of Superstorewe both love that place! We were walking the vegetable area and saw some fennel and Mariel remembered a recipe that included the fennel, arugula, and prosciutto that was oven roasted with brown sugar. With the salad we just made a simple balsamic, olive oil, s&p dressing to top it off. Then we decided to cook chicken breasts for our protein that was covered in poultry herb/butter then stuffed with our favourite cheese… goat cheese! Then for desert we bought some of the desert tofu from Superstore and nom’d on that… Well here are the photo’s of our delicious meal!

Nom’n at Dadeos

Mariel and I went to Dadeos on friday night to do some nom’n… First off we ordered some pints of Alley Cat Chili Lager & Full Moon Lager. For our mains Mariel got the classic Po’Boy with calamari & sweet potato fries and I got the shrimp creole with rice & coleslaw… of course both dishes were bang on as usual! The things I love about going to Dadeos is the atmosphere of feeling like your in New Orleans from the neon lights, music, decor, and of course the staff that make you feel welcomed. These are the reasons why I keep on coming back weekly…
